    Crab Green Chilli Masala

    Ingredients:
    6 Blue Crabs
    1 tsp Cumin Seeds
    1- 2 tsp Black Pepper
    6 Garlic Cloves
    6 Green Chillies
    6- 8 Cloves
    6 Green Cardamoms
    1 x 2″Cinnamon Stick
    1/2 a large Onion
    1/4 Cup Fresh Curry Leaves
    1/4 Cup Fresh Cilantro
    1/4 Cup Canola Oil
    1/2 tsp Mustard Seeds
    1 tsp Lemon Juice


    Method:
    1. Remove the shell from the blue crabs, cut the legs at the joints, scrape the tiny hair on either side of the crab legs, clean well, rinse and set aside.
    2. Pound the legs a bit or slitthem with a knife carefully. This is done to make the masala seep inside when it is being cooked which makes the meat flavourful and juicy.
    3. Grind together the masala ingredients as shown in the picture and set aside.
    4. Heat oil in a sauce pan. Add the mustard seeds and when they crackle, add the curry leaves followed by the ground green masala paste.
    5. Throw in the crabs and fry them in the masala till well mixed. Add 1/2 a cup of water pouring it from the sides while scraping the masala sticking there. Cover with a lid and simmer on low for 10 mins till the oil rises on top.
    6. Sprinkle some Lemon juice and garnish with chopped cilantro and serve hot with boiled rice or either String hoppers, or Lacy Hoppers. Enjoy!
